Low Carb Cookie: Sugar Free Chocolate Meringue Cookies

What has 17 calories a serving, tastes like brownies and melts in your mouth like cotton candy? Sugar free Chocolate Meringue Cookies!
Though I love to bake (think cinnamon buns!) I'm not too big on making sweets for myself (I do for guests), even with artificial sweeteners. However, now that I am eating a low carb diet I was reminded that my sugar free chocolate meringue cookies are a low carb (low everything!) treat that I may want to make occasionally if I'm having a real chocolate craving.

I adapted a recipe from all recipes to make a wonderful, guilt free treat my son and I loved!

Sugar Free Chocolate Meringue Cookies

Ingredients
3 Egg Whites
1/8th tsp cream of tarter
1/2 tsp vanilla extract (I used imitation, it was fine!)
2/3 c Splenda Granulated with Fiber 
1 Tablespoon Cocoa powder

Preheat over to 300. 
Combine egg whites, cream of tarter and vanilla. Beat to soft peaks. 
Add Splenda and cocoa gradually and beat until stiff peaks and a glossy appearence.
Drop by tablespoon onto greased cookie sheet. (I squeezed from a ziploc with a snipped corner- like a piping bag)
Bake 25-30 minutes (I'd lean toward 30)

Eat them all up! Yumm!
